Amy’s Power Bar Recipe
Earlier today I was baking my absolute favourite power bar recipe when I thought to share with you.
I eat five to six small meals a day: breakfast, lunch and dinner being slightly larger with two to three smaller snack meals spaced in between. I often eat one of my homemade power bars with one tbsp of nut butter mid-morning because makes a perfect snack with the right amount of proteins, carbs, and fats.
I have adapted this recipe from Metabolic Cooking (One of the most useful cookbooks I have purchased: http://www.metaboliccooking.com/)
1/2 cup oatmeal
1/4 cup oat bran
1/4 cup flax meal
3/4 cup egg whites
1 scoop protein powder (I used chocolate Vega performance protein)
1/4 tsp baking powder
pinch stevia
2 tsp camino cocoa powder (optional)
Blend all ingredients in food processor. Transfer mix into loaf pan. Add 2 finely diced apples. Mix all together. Bake in 350 degree oven for 30 minutes.
Super simple! A great mid-morning snack that will keep you full until lunch time!
Makes four bars.
Each serving: 189 calories, 27 carbs, 17g protein, 5g fat
(284 cal, 29g carb, 21g protein and 12g fat if eating with 1 tbsp peanut butter)
