Paleo Pancakes

Great alternative to the traditional pancakes!

Try this recipe! Paleo Pancakes: I made these on Sunday and they turned out amazing! (Courtesy of Robb Wolf)

Ingredients:

2 eggs

1/2 cup unsweetened applesauce

1/2 cup nut butter (I used sunflower seed butter)

1/4 tsp cinnamon

1/4 tsp vanilla extract (careful with the one you use as many have added sugars – read the ingredients!)

Coconut oil

Whisk everything except the coconut oil together in a bowl, heat the coconut oil on medium heat, and spread some of the mixture onto the skillet to form small pancakes. Flip after 1-2 minutes and be careful not to burn! Serve with real maple syrup or unsweetened apple sauce (I sprinkled some extra cinnamon on top and then added apple sauce
